Asian loves to eat anything with rice, including scrambled egg. There are different variety of scrambled eggs depending on which Asian dish you’re talking about. In Chinese food, we have Fu Yong Hai, which is usually shrimp, pork or vegetable scrambled egg with sweet and sour sauce. Korean also has its own version of Scrambled Egg called Gaeran Jim. Indonesian’s version of Scrambled Egg is called “Tahu Telor”, which means scrambled egg with tofu. I love this recipe because it’s so easy to make, doesn’t require deep frying, and can be done in less than an hour. This recipe is courtesy of my mother in law.
Scrambled Egg Ingredients:
- 2 blocks of Firm Tofu
- 4 beaten eggs
Peanut Sauce Ingredients:
- 4 tbsp raw peanuts with no skin, found in vegetable section at grocery stores
- 2 tbsp fried garlic, found at most oriental market
- 2 tbsp fried red onion, also found at most oriental market
- 1 tsp sugar
- 1 pinch salt
- 2 tbsp sweet soy sauce
- 1 chili pepper
- water just enough to make it less thick
Garnishment:
- Bean Sprout, boil for a few minutes
- Cilantro, separate from the stems and chop roughly
Method:
- Pan fry the raw peanuts in medium heat with no oil until fragrant. Then crush the peanut in a food processor. Heating up the peanut will make it easier to crush in the food processor.
- Mix tofu and egg and make a scrambled egg. The scrambled egg will be very huge and require a little skill to flip it over. If you don’t care about the presentation, it’s OK to look a little messy. But if you want to have a nice big round scrambled egg, the easiest to do it is by using two frying pans. Fry the scrambled egg in one pan until it’s a little hard at the bottom. Meanwhile, heat a little oil on the second frying pan. Once you’re ready to flip, put the second frying pan on top of the first, and immediately flip it over really quick. Both frying pans need to be in the same size. Heat scrambled egg until it’s cooked and the inside is no longer liquid-y. The scrambled egg part is now done. Put the garnishment on the top.
- Add the remaining of peanut sauce ingredients in the food processor and mix thoroughly until it becomes a thick sauce
- When ready to eat, put the sauce on top of the scrambled egg and eat with hot steamed rice and garnish with fried red onion and shrimp crackers. Enjoy!
