As a busy working mom of two young children, cooking an easy and healthy homemade meal is my number one priority. Recently I found a frittata recipe from weelicious.com that is super quick and easy. It’s healthy because you can sneak in a variety of vegetables, and most importantly my kids love it.
Baby Frittatas (Makes 12 Baby Frittatas)
- Prep Time: 5 minutes,
- Cook Time: 15 minutes,
- Total Time: 30 minutes,
Ingredients
- 3 large eggs
- 2 tablespoons milk
- 2 tablespoons parmesan, grated
- 1/4 cup asparagus, diced. I used frozen spinach in this recipe
- 3 sun dried tomatoes, packed in oil and diced, I omitted this and used diced ham instead
- 1/4 teaspoon salt
Preparation
- Preheat the oven 375 degrees.
- Spray or grease mini muffin tins with oil or butter.
- Whisk the eggs and milk together. Add the cheese, tomatoes and vegetables.
- Add a heaping tablespoon of egg/vegetable mixture to each muffin cup.
- Bake for 12-14 minutes.
- Cool and serve.
The best part about this recipe is that you can modify it anyway you like, just like I did it.
